Can't say there are many teams I particularly care about unless there's an interesting story involved. 

Bayer Leverkusen's unbeaten run had me watching or following every game they played, hoping they'd go the full season, sadly Atalanta spoiled it in the Europa League final, but no interest in them since they reverted to type.

This is quite accurate too actually, when a team has a story unfolding - Atalanta as you mention was one I also kind of kept a close eye on, Leverkusen the same.

I also look at results from Alaves and I have no idea why hahahaha

Dont necessarily mean you support them but you look out for their results and want to see them do well.

 

for me - Viborg FF in Denmark as I lived there for 2.5 years in the 90s, went to a few games.

 

AZ Alkmaar and Sampdoria.

I watched AZ beat Ajax 1-0 on a cold February evening, in genuinely one of the least entertaining football matches I've ever watched live.
That was however over 10 years ago, it was literally the month before Billy Beane's involvement.

Bodo on and off since during their mental first league winning season. 
Always had half an eye on the Norwegian league purely from many a Football Manager save that took me there.

And as @TeaCider24 said when there is a narrative behind a team, Hearts seem to be the team with the narrative this year.
